Muffin Tin Obsession

Lately I've been a bit obsessed with cooking things in muffin tins. I love the perfect portions, not having to cut pieces and how each item has its own crispy edges (like the stuffing at Thanksgivng). Anyway, tonight I tried a recipe I had been wanting to do for awhile. TACO TUESDAY!

Wanton wrappers in the muffin tin with whatever you want on the inside. I opted for refried beans, taco seasoned meat sprinkled with cheese and rice on the side. Wow, YUM!
